Pumped & Baked Pumpkin Oat Cake

Back a few years ago, I posted a baked oatmeal recipe for those who
1) don’t like oatmeal-slop (me raising both hands)
and
2) want a different way to incorporate oats into a breakfast or snack option.

Because we are right around the corner of October and I’m giddy as all get out about pumpkin season, I just had to make a version of the ‘oat cake’ a la pumpkin style.

 
 

Recipe Ingredients (for yield of 12 servings):

  • 2 c (190 gm) old-fashioned rolled oats

  • 2 Tbsp (20 gm) hemp hearts

  • 2 tsp pumpkin pie spice

  • 1/2 tsp sea salt

  • 1 tsp baking powder

  • ~25 grams of protein of vanilla protein powder (I used Thorne’s vanilla whey isolate)

  • 1/2 c (60 gm) mix of chopped raw walnuts and almonds (pecans would be great too)

  • 8 fl oz (240 ml) unsweetened almond milk (any milk will work)

  • 1 c (245 gm) pumpkin puree (I used canned organic pumpkin)

  • 2 large eggs (you could swap out for flax eggs if you are non-egg)

  • 1 tsp pure vanilla extract

  • 2 Tbsp pure maple syrup

Preparation Steps:

  1. Heat oven to 375F. Lightly coat with oil (or spray of choice) the bottom of a 8” x 8” glass baking dish.

  2. Stir all dry ingredients in a large mixing bowl to combine.

  3. Add in the wet ingredients and stir to combine. The mixture will be a tad liquidy but will absorb during the baking process.

  4. Pour the mixture into the baking dish and bake for 40-50 minutes or until done (use the toothpick test). Let cool for at least 10 minutes.

 
 

Basic nutrition info (per piece):
146 calories
16 gm carb
3 gm fiber
7 gm protein
6 gm fat
~2:1 carbohydrate to protein ratio

Similar to the baked oatmeal recipe, this is not a sugary-sweet concoction (even with the maple syrup inclusion). I prefer you make it as is, give it a taste, and then decide to add your own touch of extra sweetness through a fruit topper, an extra drizzle of maple syrup or honey, or whatever you gotta have.
