Sweet Potato Curry Boat

How many times have you scoured the internet for “quick/easy dinner ideas” only to find countless options that are anything but what they claim… 20-minute easy dinners that actually require 2+ grocery trips and hours of your time once you factor in prep, cook and clean-up?

I am not here for that, and when I tell you this recipe is EASY and FAST, I promise to deliver!

Sweet potato “boats” are one of my go-to lunch options, but who am I to limit you from spinning the idea for breakfast, dinner, or even a snack?

Here’s the general structure. 

Ingredients:

  1. Base: Sweet potato

  2. Fillings:

    • Kitchari pouch (Trader Joe’s has a variety of “Indian Fare” packets such as this one)

    • Tofu here, which was pan-seared for a stir-fry and repurposed for this dish

    • Mixed baby kale

Preparation Steps:

  1. Cooking the sweet potato is the biggest lift here.  These can be made ahead of time and kept in the refrigerator for true grab-n-go use throughout the week.  I often make the sweet potato on the spot using a microwave: poke holes/slits in the (washed) potato, wrap in a damp paper towel, and microwave.  Cooking time varies with microwave power and the potato size, but I generally select the potato button then will flip and add a few minutes of cook time.

  2. Once your potato is cooked or warmed, the curry packet can be heated in 2 minutes. Just tear a side and cook directly in the microwave.

  3. Open your potato, top with tofu (or added protein of choice), kale (or added veggie(s) of choice), and curry packet. 

 
 

This is truly a QUICK and EASY meal, and checks the boxes for fiber, color, veggies, and protein.  Bonus points for toppers such as a healthy fat source from peanuts or cashews, herbs like Thai basil, or bulking it up by adding more colorful veggies.
