Peachy Coconut Smoothie

This here concoction is easy, quick to prepare, nourishing, and will delight your palate!

Seriously, if you have the ingredients on hand, you’ll have this liquid gold ready to gulp in less than 5 minutes time. Like a New York minute, I think.

Ingredients:

  • 8 oz unsweetened vanilla coconut milk, from carton (I used this)

  • 20 grams of protein from a vanilla protein powder (I used Thorne’s whey isolate)

  • 1/2 frozen small banana (you can use fresh!)

  • 1/2 c frozen peaches (you can use fresh!)

  • 2 Tbsp shredded unsweetened coconut

  • dash of cinnamon (optional)

  • handful of ice, additional 4-8 oz of water (add less water if you want it thicker)

Add the ingredients to the blender and blend until desired consistency.

Basic nutritional profile for the recipe:
310 calories
27 grams carbohydrate
4.5 grams fiber
23 grams protein
12 grams fat
~1:1 ratio of carbohydrate to protein

I enjoyed this smoothie after a recent morning run, but it would also be a decent snack option to hold you over until your next meal (thanks to the 1:1 ratio of carb to protein).
